All this egg talk had me thinking about making some eggs so this morning I made a sweet potato hash with collard greens and an egg! I’ve never made anything like this before, but I thought I would take the whole vegeterian hen fed thing and let it inspire me to create a new dish! Do you see how bright that yolk is from the egg?
