Meal prep and the chicken

Now that I have a little bit of time I’ll continue talking about meal prepping. The biggest question people talk about is what food do I cook that lasts all week. This seems to be an issue with people. I’ve never had food go back in the fridge. I cook on Sunday and I’ll meal prep for all meals until Friday.

Is food going bad really a problem? Like I’ve already mentioned, I make the food and portion it out right away so every meal is grab and go.

I love chicken. I eat lots of chicken. I cook it up on Sunday and it goes a long way. Recently, I’ve rediscovered my love for the crockpot and found love in a rice cooker. No doubt these are things that we will use every week.

I wish I had some better insight to tell you but I usually just put some chicken breast in the crockpot and add the seasoning and sauce of choice. So here are some quick suggestions for crockpot chicken for a meal prep.

I usually use 2 pounds of chicken breast to last the entire week. I cook the chicken breast whole so that I can shred the chicken when I’m done. You don’t have to do it that way. You can add the chicken halfway through the cooking process so that it can just be chunks or sear off the chicken chunks in a pan and add to the crockpot. It’s completely up to you.

Bbq chicken

BBQ chicken – I use the slow cooker packet for this one. I use reduced sugar ketchup and Splenda brown sugar and a can of crushed pineapples. It works well. Served with sweet potatoes and a veggie.

Food prep #fitfluential

Orange Chicken – I use one jar orange marmalade (yes, I’m not too shy to use sugar free if I need to), Splenda brown sugar, 1 cup of orange juice, one diced bell pepper and 1/2 diced white onion. I guess it wouldn’t hurt to add some of those mandarin oranges either. Served with rice and veggie.

The first time I made the orange chicken Willie wasn’t that enthused about it. That’s why I have now added to orange juice and suggested the oranges. That will probably make a big difference.

Fiesta chickenMrs. Dash seasoning packet, one jar of salsa, frozen fajita veggies, 1 cup chicken stock, 1 can green chilies. Served with rice and black beans.
